About Food Sensitivity Testing:
Whereas IgE food allergies usually involve an immediate reaction to an allergen, IgG food sensitivity testing involves a delayed reaction. As a result, when someone has an IgG food sensitivity it frequently will take a few hours, and sometimes a few days before someone will have a negative reaction to a food. Keep in mind that not all labs which offer food sensitivities are the same. For example, the Multiple Food Immune Reactivity Screens from Cyrex Labs tests a number of different foods both raw and cooked, including asparagus, broccoli, carrots, and mushrooms. Although I like Cyrex Labs a lot and recommend their panels, other food sensitivity tests from different companies can also be valuable.

The Cyrex Labs food panels are unique in that they don’t only evaluate the immune reactions to different foods, but they also evaluate raw and cooked forms of common foods, food enzymes, lectins and artificial food additives (including meat glue), colorings, and gums. It can help with the early detection of dietary-related triggers related to autoimmune conditions.
This test also looks at the circadian rhythm of cortisol by measuring the free cortisol and cortisone levels throughout the day. In addition, it tests for the cortisol metabolites, along with DHEA-S.
